Basque Burnt Cheesecake (Billy

Method

  1. Preheat the oven to 220C and line a 6x6 inch square pan with parchment, leaving overhang.
  2. Beat the cream cheese and castor sugar until smooth.
  3. Add the eggs one at a time, then the heavy cream, vanilla, lemon zest, flour and salt, mixing until smooth.
  4. Pour into the lined pan and bake for about 30-35 minutes until deeply browned on top but still wobbly in the centre.
  5. Cool, then chill before slicing.
