Chicken Pasta Bolognese

Method

  1. Cook the pasta in a large pan of boiling water according to packet directions.
  2. Heat the oil in a frying pan over medium heat. Add the onion, carrot, celery and garlic and sweat, stirring often.
  3. Add the chicken mince and cook, stirring, for 8-10 minutes or until browned.
  4. Add the tomato pasta sauce and half the parsley. Stir until combined and bring to the boil. Reduce heat and simmer for 15 minutes.
  5. Serve the pasta topped with the bolognese and the remaining parsley.
