Method
- Cook the pasta in a large pan of boiling water according to packet directions.
- Heat the oil in a frying pan over medium heat. Add the onion, carrot, celery and garlic and sweat, stirring often.
- Add the chicken mince and cook, stirring, for 8-10 minutes or until browned.
- Add the tomato pasta sauce and half the parsley. Stir until combined and bring to the boil. Reduce heat and simmer for 15 minutes.
- Serve the pasta topped with the bolognese and the remaining parsley.
