Chocolate Cake base (Pair work)

Method

  1. Preheat oven 180c
  2. Bowl A to whisk well and sift the dry ingredients once.
  3. On low medium heat simmer the pot. Making sure the butter is melted n the mixture is hot but not boiling.
  4. In a large bowl add in all eggs and using an electric whisk on high whisk the egg.
  5. Once the eggs have whisk together, gradually add in the sugar. Continue whisking on high for 7min until thick, pale and triple in volume.
  6. Change to a hand whisk and add in the flour in 3 batches. Do not over mix it. Once you can't see the flour stop mixing.
  7. Make sure the milk and butter mixture is still warm/hot. Temper the warm liquids by mixing it with a scoop of the cake batter.
  8. Slowly add it back into the cake batter and mix it in very fast to prevent overmixing.
  9. Pour the batter into line pans. Bang the pans on the table to release any bubbles.
  10. Bake it in the oven immediately for 20-25min.
  11. Poke the cake with a skewer to check the doneness. Once the skewer comes out clean the cake is done. Remove and let it cool.
