Gong Bao Chicken

Serves about 4 · from D'Open Kitchen

Method

  1. Heat up wok with oil.
  2. Cook the peanuts till golden brown. Set aside.
  3. Use the same oil, medium heat, sear the chicken till 70 percent cooked. Set aside
  4. Heat pan with oil. Add dried chilli, chilli padi and peppercorn. Stir fry
  5. Add ginger, shallots and then garlic stir fry till fragrant.
  6. Add chicken and stir fry on high heat.
  7. Lower heat to medium, add sauce and stir fry.
  8. Add peanuts and Sprint onions. Stir fry.
