Nattilas de Leche (Spanish Custard)

Serves about 4 · from D'Open Kitchen

Method

  1. Flavoured Milk
  2. Wash the lemon to make sure its clean, the peel the lemon.
  3. Pour 2 cups of milk into a large saucepan on medium heat until warm and add the lemon peel and cinnamon stick. Remove when hot (do not boil it)
  4. Set aside for about 10 minutes.
  5. Thickener Component
  6. Slowly add remaining milk into cornstarch and whisk to eliminate any lumps.
  7. Whisk the egg yolks with sugar until blended and frothy.
  8. Combine the milk/cornstarch mixture into egg yolk/eggs mixture and ensure they are mixed.
  9. To Complete
  10. Return the flavoured milk to medium low heat and remove lemon peel and cinnamon.
  11. When milk is hot, add the vanilla extract then slowly whisk in the thickening component and whisk until blended and smooth.
  12. Pour the custard mixture into ramekins and allow to cool to room temperature then plastic wrap them and cool to cold in the fridge.
  13. Sprinkle with a little cinnamon powder before serving.
