Onion Bhaji w Cucumber Raita

Method

  1. Bhaji:
  2. Sliced the onions fine and transfer into a bowl with a pinch of salt; let it rest for a few minutes and drain excess moisture.
  3. Create a batter with mixing 2 the flour, ground spices and fresh coriander w/ a little water at a time until a thick paste occurs.
  4. Mix in the onions and shallow fry until golden and crispy.
  5. Raita:
  6. Grate the cucumber and add a pinch of salt; let it rest for a few minutes and squeeze excess liquid out.
  7. Add squeezed cucumber to the yoghurt and add chopped coriander.
  8. Season with salt and pepper and serve with onion bhaji.
  9. Notes for Trish:
  10. Instead of doing the raita - you can buy some sweet chilli sauce (like the thai version) to serve it with - if you think the yoghurt too expensive.
