Pad Krapow Gai Saap (Basil Chicken)

Method

  1. Chop the garlic, shallots and chillies and set aside.
  2. Mix both soy sauces, the fish sauce and 2 tbsp water in a small bowl, then stir in the sugar to dissolve.
  3. Heat the oil in a wok and fry the shallots and garlic until fragrant. Add the minced chicken and cook through, then add the snake beans.
  4. Add the seasoning sauce and stir through, allowing it to simmer before adding most of the basil and wilting it in.
  5. Serve over steamed rice and top with extra basil and a fried egg.
