Method
- On a fry pan on medium heat heat up the oil then add your potatoes and onion to shallow fry until cooked. Removed and drain from oil.
- When the potato mixture is cooled to room temperature, mix with eggs, chorizo & capsicum then season generously with Salt and Pepper.
- On a low medium heat fry pan, cook the mixture (no stirring) until 'cake' is set.
- Flip on a plate to serve.
