Tortilla Espanola

Serves about 4 · from D'Open Kitchen

Method

  1. On a fry pan on medium heat heat up the oil then add your potatoes and onion to shallow fry until cooked. Removed and drain from oil.
  2. When the potato mixture is cooled to room temperature, mix with eggs, chorizo & capsicum then season generously with Salt and Pepper.
  3. On a low medium heat fry pan, cook the mixture (no stirring) until 'cake' is set.
  4. Flip on a plate to serve.
