Yangzhou Fried Rice

Serves about 4 · from D'Open Kitchen

Method

  1. Heat the wok/fry pan to very hot and add oil.
  2. Quickly scramble the eggs. Add the onions, prawns and ham to saute.
  3. Add the vegetables to cook, then add the rice, light soy sauce, salt, and pepper. Continue to stir fry until fragrant.
  4. Serve while hot.
  5. Notes for Trish:
  6. Ham means SPAM or its chicken equivalent!
  7. Can buy cheap frozen prawns - small also can
  8. You can buy fried chilli (with oil) if you want to make it spicy
