Cheese tarts (healthier choice)

Method

  1. Preheat your oven to 350°F (175°C) and grease a tart pan or muffin tin.
  2. In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, honey/maple syrup, and a pinch of salt. Mix until a dough forms.
  3. Press the dough evenly into the bottom and sides of the tart pan or muffin tin to form the crust.
  4. Bake the crust for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  5. In another mixing bowl, beat together the softened cream cheese, Greek yogurt, honey/maple syrup, eggs, vanilla extract, and lemon zest (if using) until smooth and creamy.
  6. Pour the filling into the cooled crust.
  7. Bake the tart for 20-25 minutes, or until the filling is set and the edges are lightly golden.
  8. Allow the tart to cool completely before slicing and serving.
