Com Tam (Viet Broken Rice)

Serves about 4 · from D'Open Kitchen

Method

  1. Pork Chops:
  2. Mix all the ingredients of the marinade together.
  3. Trim the pork chops, then marinade the pork chops for as long as possible.
  4. On a hot fry pan, sear and cook the pork chop until cooked.
  5. Pickled Vegetables:
  6. Julienne (matchstick cut) the carrots and daikon to even sizes.
  7. Mix the warm water with sugar and salt - making sure that it completely dissovles. Then add the rice vinegar.
  8. Add you vegetables to the mix and let it sit and pickle at room temperature.

Dressing

  1. In a mixing bowl, add the warm water, then garlic then sugar and make sure that the sugar is completely dissolved.
  2. Add the remaining ingredients: lime juice, fish sauce and chilli to complete it.
  3. Others:
  4. Fry a sunny side up egg
  5. For each portion, plate up with: Rice, sliced cucumber and tomatoes, fried egg, pork chops and pickled vegetables.
  6. Notes for Trish:
  7. For the meats you can do (for cost saving - remember roughly 100grams meat per pax):
  8. Pork Chop (bone in would be nice)
  9. Pork Loin Steak
  10. Pork Belly
  11. Chicken Thigh Cutlet
  12. Chicken Leg (bone in)
