Method

Chicken

  1. Score the thighs and pound chicken evenly flat at thumb size.
  2. Marinade chicken with spices seasoning, cayenne, garlic powder and milk.
  3. Breading
  4. Heat up oil and standby breading.
  5. Flour, egg, panko.
  6. Fry till Golden brown and set aside to cool.

Gravy

  1. Heat up pan for Golden Brown roux.
  2. Milk, season and thicken.
