Moonlight Hor Fun

Method

  1. Mix the sauce ingredients together.
  2. Heat a pan/wok until slightly smoky.
  3. Add cooking oil, then the hor fun noodles, and fry until a little brown on the edges.
  4. Add the sauce mixture, stir well, then remove the noodles.
  5. In the same pan add cooking oil and render the sliced chicken (or pork belly).
  6. Add the chopped garlic, then the marinated prawns.
  7. Add 1 cup of water once the prawns are seared outside but not fully cooked.
  8. Add the bok choy and let it simmer for about 2 minutes.
  9. Add the cooked hor fun and mix with the gravy, then plate.
  10. Crack a fresh egg over the hor fun and toss to mix. Serve.
