Oyster Omelette

Method

  1. Mix the starch in a bowl with water and set aside.
  2. Marinate oysters with hua tiao wine (optional) and soya sauce. Set aside.
  3. In a bowl, combine all the ingredients for the seasoning sauce. Mix well.
  4. Beat 3 eggs in a mixing bowl and add half of the seasoning sauce.
  5. In a heated pan, add oil and pour in the starch solution.
  6. When the batter turns crispy at the edges, add the beaten eggs.
  7. Sprinkle the spring onions and drizzle some oil over.
  8. Flip the omelette and separate into smaller pieces. Push the omelette to one side and add the garlic.
  9. Add the oysters and mix well. Drizzle the remaining seasoning sauce over the oysters and mix well with the omelette.
  10. Dish up and garnish with coriander leaves.
