Prepare the noodles following packet directions. Transfer to a large bowl.
Meanwhile, heat a large frying pan or wok over high heat until just smoking. Spray with oil. Stir-fry the prawns for 4-5 minutes until they curl and change colour.
Add the prawns, capsicum, shallot and coriander to the noodles. Toss to combine and divide among serving bowls.
