Southern Fried Chicken w Onion Rings & Slaw (Buttermilk Fried Chicken)

Method

Chicken

  1. Carve the chicken into 8 pieces - (2 breasts, 2 wings, 2 thighs, 2 drumsticks)
  2. Coat the Chicken pieces with the buttermilk, salt and pepper and leave to tenderise for as long as possible.
  3. Combine all the dredging components together and mix evenly.
  4. Add the beaten egg into the tenderizing chicken.
  5. Heat up the oil to about 160 deg C - just when the batter begins to fry. Do not overheat the oil.
  6. Take each chicken piece and dredge it through the flour mix and make sure it is completely covered.
  7. Fry for approximately 25 mins, or until completely cooked through.
  8. Let the chicken rest for 5 mins and let excess oil drain.
  9. Slaw
  10. Shred the cabbage, grate the carrots and finely sliced the onions
  11. Add the lemon zest (optional) and squeeze in the lemon juice.
  12. Add mayonnaise and toss through seasoning with salt and pepper
  13. Onion Rings
  14. Slice the onion into rings.
  15. Dredge the onions through the seasoned flour, egg and breadcrumbs.
  16. Then deep fry until golden.
