SWEET POTATO MUFFINS

Method

  1. Preheat the oven to 180 C.
  2. Steam/Bake the sweet potatoes until tender, then scrap out the meat of the potatoes.
  3. In a medium bowl, combine the flour, sugar, cinnamon, nutmeg, baking powder, and baking soda.
  4. Whisk until everything is well combined.
  5. In an another bowl, whisk eggs with sugar and brown sugar till frothy.
  6. Add in the oil and melted butter, whipped sweet potatoes, eggs, milk, and vanilla extract. Mix thoroughly.
  7. Add the wet mixture into the dry ingredients bowl and fold to combine. ( batter will be thick!)
  8. Using a scoop or 1/4 measuring cup, spoon the batter into the muffin pan.
  9. Bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean
  10. Let cool.
  11. Serve & enjoy!
