Combine spices and herb (Spice Mix) and 1 tablespoon olive oil in medium bowl and add chicken to marinate for 10 minutes. Set aside.
In a frying pan, sear chicken until golden brown (does not need to be fully cooked) and then set aside. In the same pan, add some oil and saute the onions. Add capsicums when the onions are soft and cook through.
Slice the chicken then add to frying pan, make sure the chicken is fully cooked. Then let rest.
Warm tortillas on a large pan until lightly charred.
Assemble the fajitas, by placing a bed of lettuce, then salsa, then chicken/veg mix, top with some fresh coriander and a squeeze of calamansi juice on top of the tortilla.
