Chicken Quesadillas

Method

  1. Slice and marinate the chicken with salt, pepper and Cajun mix.
  2. Heat 1 tbsp oil in a skillet over high heat. Sauté the chicken until fully cooked, then remove and set aside.
  3. In the same pan add a little oil and sauté the onion and capsicum until lightly browned, 3-4 minutes. Set aside with the chicken.
  4. Wipe the pan, add a drizzle of oil. Lay a tortilla, spread a thin layer of grated cheese, then the chicken, onion and capsicum. Top with more cheese and a second tortilla.
  5. When golden on the first side, carefully flip and cook the other side until golden brown.
  6. Cut into triangles and serve with pico de gallo (combine all pico ingredients).
