Oyakodon

Serves about 4 · from D'Open Kitchen

Method

  1. Add the dashi stock, sugar, mirin, soy into a pan and let it come to a simmer.
  2. Prepare your chicken and spring onions by slicing it into thin slices.
  3. As the stock simmers, add in the chicken and onion and let it simmer until chicken is almost cooked (5 mins).
  4. Beat the eggs, and slowly drizzle the egg into the chicken and onion stock. Cover and let cook for a 1 minute (soft eggs) to 3 mins (hard eggs).
  5. Plate it up on top of rice and add extra seasoning and sliced spring onions.
